i will admit it, i am a noodle-holic. i love them. buckwheat, semolina, rice, you name it i love ’em. my fav go to recipe quick ramen noodles. i love the ramen noodles themselves, however i hate the powdery packet of doom that they come with. so i make my own broth. this broth takes its inspiration from the one and only mark bittman. he is wonderful. his tome how to cook everything vegetarian is a staple in my kitchen. this is a broth that is wonderful when paired with noodles, tofu, setain what have you. the recipe is mostly improved with what i have on hand but keeps the same basic structure. the only thing that is actually measured out is the water. everything else is to taste.


  • 1 1/2 c water
  • organic ketchup (don’t judge until you have tried it!), make sure there is no added sweetenter
  • soy sauce or tamari
  • vegan worcestershire sauce
  • hot sauce

throw all ingredients in a small sauce pan and taste as you go until you get the combonation that you like. turn the burner on high, throw in your noodles and cook away.

noodles and broth are such a great last minute meal that i can throw together after a day at work when i have no idea what to make. warm, tomato-y, salty with just a little bit of heat from the hot sauce. wunderbar!

when life gives you pumpkins December 30, 2010

you make pumpkin cookies!

i came home from work today with a horrible headache and a rumbling tummy. when this combo arises, nothing will satiate me except baked goods. a quick search of recipes, i found these lovelies. cake like in texture with delicate crumb, dotted with dried cranberries, oats and warm right out of the oven…stick a fork in me. even husband partook of few. i did not have to twist his arm once they started baking and the wonderful smell of molasses filled the air.

pumpkin molasses cookies (adapted from post punk kitchen)

  • 2 c unbleached flour (or combo of wheat and unbleached)
  • 1 1/3 c rolled oats
  • 1 tsp baking soda
  • 3/4  tsp salt
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 1/3 c sugar
  • 2/3 c neutral oil (like canola, grapeseed or vegetable)
  • 2 tbs plus 1 tsp blackstrap molasses
  • 1 c pumpkin puree
  • 1 tsp vanilla
  • 3/4 c dried cranberries

preheat oven to 350. and grease a baking sheet in a medium bowl, combine flour, oats, soda, salt, cinnamon, pie spice and set aside. in a larger bowl, combine sugar, oil, molasses, puree and vanilla. toss cranberries in the flour mixture to coat well. in three batches add the dry mix into the wet mix. stirring just until combined. do not over mix. using a small disher or a tablespoon, drop onto the greased cookie sheet about 1 inch apart (they don’t spread very far, but they do puff up) bake 12-15 min. place on wire cooling rack and cool.

they are pretty awesome. (also egg and dairy free!). i gather you could cut the sugar down even more to about a cup to let more of the molasses flavor and smokey sweetness come thru, but i will save that for a different post.

my headache is not completely gone yet and with freezing rain on the way, i will take a few of these and go read my magazines.

i will feel better in the morning.


oatmeal is my independence December 29, 2010

or, how i can eat chocolate for breakfast and not feel guilty.

i never liked oatmeal all that much. my mom used to make me huge bowls of it along with eggs and bacon the morning of tests when i was in school. “brain food” she called it. ugh. never instant sugar filled yumminess that my friends were allowed to eat. this was stove top sit in your gut for the next day or two oatmeal.

then i moved out, and went to college. the first time i went grocery shopping with my new roommate, i purchased instant oat meal. it was dinosaur egg oatmeal (i don’t remember the exact name). it was the kind where you poured boiling water over sugar-coated “eggs” and they dissolved into sugar dinosaurs among sugar laden [what i am pretty sure was] oatmeal. it was heaven. HEAVEN i tell you! oatmeal became the symbol of my independence.

it also became the symbol of my ever-growing fat ass.

fast forward to now. in my research for the year of fearlessness, i have come across many health related blogs that tout the benefits of eating oatmeal for breakfast. harumph i say. until i made some stovetop oats myself. i poured over the recipes and have been making several bowls a week. when made well, this stuff will keep you full until lunch. adding an egg to it (trust me, it makes wonderful custardy oat-y goodness) adds protein and resulting breakfast will not feel like a iron ball in your gut.

thus i give you chocolate/peanut butter/coconut oatmeal (you got a better name?). recipe inspired by eat move write, hungry hungry hippieyes, i want cake and the healthy everythingtarian

  • 1 c water
  • 1/2 c oats of your choice (i happen to have quick cook at the moment)
  • dash of salt
  • 1 organic egg (egg beaters can be used if needed)
  • 1/2 tsp cocoa powder
  • 1 TBS natural peanut butter
  • agave syrup (or whatever sweetener you like best)
  • unsweetened shaved coconut (optional)

combine water, oats, and salt in small saucepan. let warm just a moment, and add egg. whisk vigorously so egg combines without scrambling. let the mix bubble a few times while stirring, then remove from heat. add cocoa powder, peanut butter then agave to taste top with coconut if wanted and devour.

so this is christmas… December 24, 2010

and what have i done?

not exercised, it can tell you that much. the past two days i have woken up with a screaming migraine. i am on vacation right now, how the hell am i getting a migraine? usually work creates them. i have had nothing but crud these past two days, coupled with stress of the dinner we hosted last nite, and voila…migraine.

but all in all the dinner went well.


it all started with my trusty stand mixer, making pumpkin whoopie pies. i have a small home based cake business, so my family always expects some sort of baked good. i don’t really mind, because i love baking!




the day progressed with other such foodstuffs. ham, green beans, potatoes.  the usual christmas fare.








then, it was over.







after the dishes were done i ran upstairs, got into bed, and curled up with two of the most laziest dogs ever known to man.

i can always excercise tomorrow.



with my head ringing, my heart singing, all is merry and bright.

the triad December 21, 2010

you see this? this is dinner on thursday.

my family has many food traditions. the most massive of them being around the holidays. while some people just have christmas day dinner, my family has to out do everyone. it all starts when my uncle flys in from san francisco. that night my mom makes a huge dinner for him (this year, lamb from trader joes). this alone, has left overs for days (and several sammies for my dad and uncle). then we move on to the big guns. the triad. christmas eve eve (yes, it’s a holiday day in my household), christmas eve and christmas day. usually all three are over at my parents house.

this year, we split it up. christmas eve eve is now mine (insert evil laugh here).

at first, i tried to convince husband to chuck it all and to order city bbq (local bbq place here in columbus which he loves). then we started going thru cook books (or cooking apps on the beloved iphone) and we wanted to have a meal to out do all other meals (well, to be more exact, my sisters dinner, which is the next night). So I give you (drumroll please) christmas eve eve dinner at the eat run lose house:

year of fearlessness December 20, 2010

what is the year of fearlessness? well, it is my pledge to my husband and myself to treat 2011 as such.

i consider myself pretty shy. although my family and friends might disagree. i have always turned a deaf ear to my inner self that wants to go zip lining, the inner self that wants to fly to Hawaii and try surfing, the inner self that wants the lead in the musical, but will never audition, the inner self that wants to run.

i have a secret confession. i have always wanted to be a runner. (stop laughing)

i see people outside in my neighborhood running. i see my sister pick it up as a way to de stress and i see her run a 5k and a half marathon. i see myself attempt it, look ridiculous and stop 3 weeks later (and get accosted by a WAY over zealous gym rat asking me if i will need CPR. i got your CPR right here, jerk).

the major flaw in my running plan, i am overweight. i have asthma. i look like i am having an epileptic fit when i attempt it. see what i mean? thus the year of fearlessness. i am going to conquer the world…or at the very least columbus, oh. so here i am, about 2 weeks before the new year and I am planning with my husband on what we want to do. i am transforming my life one day at a time, and i am not looking back. but before i do…i need a drink

ps. i am not totally convinced fearlessness is a word, but since spell check did not pop up, i am going with it.
